Prosciutto Wrapped Peppers

Baked long green peppers stuffed with provolone cheese, wrapped with Prosciutto di Parma served in a cast iron skillet.


4 Anaheim peppers or sub any long mild peppers

8 slices of good quality prosciutto di parma

8 oz Provolone cheese




Preheat oven to 400 degrees F. Wash and slice open the peppers down one side, carefully cleaning out the inside ribs and seeds. Cut the Provolone cheese into thin strips and stuff them into the Anaheim peppers. Carefully wrap 2 slices of prosciutto around each pepper, securing with 2 toothpicks. Arrange on a cast iron skillet and roast for approximately 20-25 minutes, until cheese is melted and bubbly. Serve the peppers sliced into bite-sized pieces and pair with a glass of Carmenere!
